Bube’s Brewery Dining and Entertainment (name change) has announced that they are ready for some changes.  They have a new Executive Chef, established new menus, developed new entertainment venues and has appointed a new Director of Operations

Bube’s new Executive Chef, Corinna Killian, is redefining Bube’s food culture.  Killian, who served as Executive Chef at Belvedere Inn, Lancaster, PA, for over a decade will take over Bube’s top culinary position and will direct the historical, full-service Catacombs Restaurant.  Chef Killian will offer distinguished and illustrious menu options that will focus on the best that local markets have to offer, along with local and sustainable cuisines.
“I’m excited about trying new things in the Catacombs Restaurant, which is such an inspirational place, and a destination for visitors from all over the world,” said Chef Killian. “The history, the architecture and the ambiance call for the freshest ideas and I’m looking forward to the challenge.”

Chef Killian also draws on color, composition and textures in her recipes that result in visually stunning and elegant dishes.

“We are thrilled to have such exceptional talent on board. She will be a wonderful addition as we prepare to advance our culinary offerings in our extraordinary historical facility,” says Sam Allen, owner of Bube’s Brewery Dining and Entertainment.

Chef Killian will also be transforming Alois, founder Alois Bube’s original beautiful Victorian dining room into a “Chef’s Table” themed restaurant. Guests will enjoy a unique seven course tasting menu served by Chef Killian herself.  Every dish will be prepared especially for each patron and served by the chef.  Guests will be guided through an exquisite tasting menu, each dish served by principal Chef Killian. The Chef’s Table will prove a rare treat for those who wonder how a masterful chef manages a busy gourmet kitchen.

North Carolina native, Dustin Wilcox, is Bube’s new Director of Operations. Wilcox has over 11 years of industry management experience.  He has managed at all levels and has gained exceptional hands on experience in training and managing restaurant staff.  Proficient in cost management and driving restaurant sales, Wilcox is also credited with the conception and design of innovative menus and beverage standards, creative marketing programs, guest and community relations and Health Department compliance.
Wilcox will supervise 50,000 square feet of dedicated restaurants, Victorian saloons, private event dining, catering and a historic brewery.  “Managing our complex of restaurants calls for a unique skill set.  With Dustin’s extensive and diverse hospitality background and distinct fine dining and beverage experience, it is a suitable fit for Bube’s Brewery Dining and Entertainment. Hiring Dustin as our full time General Manager will enhance our quality of service and make a positive impact to our bottom line,” says Sam Allen, owner of Bube’s Brewery Dining and Entertainment.

“Dustin is a highly motivated, goal-oriented professional who will ensure efficient restaurant operation, as well as maintain high production, productivity, quality, and customer-service standards for Bube’s Brewery Dining and Entertainment, said Allen.”

Bube’s Brewery Dining and Entertainment marks a new exciting journey for me, and I’m so happy to join the team,” said Wilcox. “I want everyone to leave with a smile on their face!”  In addition to enhancing the guest experience, Wilcox, together with his executive staff, will also be focusing on positioning Bube’s as a major Lancaster County Attraction, strengthening Bube’s prominence as a National Landmark and spearheading Bube’s plans to excavate their lower caves for clues to stories relating to the Underground Railroad.

Phase Two of Bube’s turnaround is planned for the spring.
